Cranberry Chicken Breakfast Patties
This recipe was made quickly one evening this week after my naturopath told me to get more healthy fats and proteins during breakfast and lunch to ward off that afternoon slump. It works! Extra plus? The cranberries and thyme make it taste like fall :)
Mix things up with ground turkey, blackberries, sage, etc.
500g ground chicken
1 garlic clove, minced
1/2 cup cranberries
3 small chilli peppers (or a shake of dried flakes)
1 tsp dried thyme
2 tbsp ground flax seeds
salt & pepper
Sautée cranberries and garlic in a pan with olive oil until berries release their liquid.
Mix chicken, hot peppers, thyme, flax, and a pinch of salt & pepper in a mixing bowl.
Incorporate cranberries, their sauce, and garlic to the chicken. Combine.
Make meatball sized balls, flatten, and cook in a pan with olive oil over medium heat until cooked through. Enjoy!
Makes 14. Keep in the fridge for up to a few days or freeze for the future.
